Did you know that there are certain foods that give off high amounts of a naturally occurring, odorless, colorless gas and plant hormone known as ethylene?
This triggers cells to degrade, leaves to droop, the skin to turn color and the fruit to become sweeter and softer, in other words ripen. So to prevent over ripening these high ethylene producers need to be stored away from other fruits and vegetables.
Another key factor in storing vegetables and fruits is humidity. More on this in another In Your Bin note!
High Ethylene Producers: Apples, Apricots, Avocado, Bananas, Cantaloupe, Figs, Guava, Honeydew, Kiwi, Mango, Nectarine, Papaya, Passion Fruit, Peach, Pear, Plum, Quince, Tomato
