In Your Bin July 15th: News from the Fields!
What is in season?! At the markets we come to realize that as fewer and fewer families have access to farm life the rhythms of produce in season are barely known.
People come to the market hoping for acorn squash or melons, yet the season is not here. So here is a list of what you can expect – given nature co-operates! – for you and your families in the coming weeks.
Its been a hot start to the season and we are starting to see the transition from spring/early summer to our mid summer hot crops. We will soon be seeing the last of the peas and spinach until the fall months.
Zucchini, carrots, onions, green beans & hakurei turnips will be showing up in the boxes soon. Tomatoes, peppers, potatoes, melons and sweet corn not too far away, in a few weeks.
If you have some of those garlic scapes still taking up room in your fridge (!) we are sending along a recipe from of our CSA members that may interest you. Also included is a link for Hakurei turnips still on the theme from last week of making use of vegetable tops!

Recipe: Sautéed Japanese (Hakurei) Turnips With Greens Recipe
Recipe: Fermented Garlic Scapes
Based on the Noma Fermentation Guide’s asparagus recipe, courtesy one of our CSA members
- Cut the scapes into 1.5-2″ chunks
- Put mason jar on the scale and tare it, add scapes and cover with water.
- Using the weight of water and scapes, calculate 3% salt (I’ve seen different salt percentages, but 3% is definitely in the safe zone.)
- Pour out water and whisk it with salt until dissolved
- Pour brine back into jar and cover with fermentation weight (or whatever works)
- Cover jar (not too tightly – we burp ours every day and make sure to clear any air bubbles)
- Taste the scapes every couple days until done. They end up pretty sour, and the intense garlicky-ness is gone.
- Refrigerate once done.
