Recipe: Braised Fennel
Braised Fennel
Original recipe from Epicurious
- 2 fennel bulbs, with fronds
- 1 1/2 Tbsp extra-virgin olive oil
- 1/4 tsp salt
- 1/8 tsp black pepper
- 1/2 cup chicken broth (reduced-sodium recommended)
- 1/4 cup water
Directions
1. Remove stalks from fennel bulbs, reserving 1 Tbsp chopped fronds for use as garnish.
2. Slice bulbs lengthwise into 1/2″ thick slices.
3. In large heavy skillet, heat oil over med-high heat until hot but not smoking. Brown fennel slices for 3 to 4 minutes, turning once.
4. Reduce heat to low. Season fennel with salt and pepper, then add broth and water. Cover and continue cooking until fennel is tender, ~10 to 12 minutes. Garnish with fennel fronds.
